This cake is a beautiful take on a classic lemon cake. It comes with the most incredible freeze-dried plum glaze and decorations, which offer an intense colour and true plum flavour.

Lemon Cake Mix | Spelt flour, sugar, blanched ground almonds, polenta, baking powder, salt
Plum Icing Mix | Icing sugar, freeze-dried plum powder
Plum Decorations | Freeze-dried plum slices
Non-stick Cake Tin Liner

Milk | 190ml or about 3/4 of a cup of your choice of regular milk or dairy-free milk (coconut, almond, oat or rice milk work best)
Butter or oil | 115g or about 1/2 a cup of your choice of butter or oil (light-flavoured oils like coconut oil or rice bran oil work best)
Plums | 200g or about 4 fresh or tinned plums, black Doris plums work best (sliced ripe pears, raspberries or apricots would be lovely too)
Lemon juice and zest | 90ml of lemon juice or about 2 lemons, and zest of 1 lemon

Best served with greek yogurt or mascarpone! Tinned Black Doris plums work really well in this cake, so if you don't have access to fresh plums then don't worry, pick up a tin from the supermarket.

If you want to make a larger cake, you can use two Lemon Plum cake mixes - just make sure you bake each in a separate tin and make your cake a double-layer cake. If you combine two batters in one tin, it will be a challenge to cook the cake the whole way through. Also, if you want to change things up, the Lemon Plum cakes also works really well with frozen or fresh blackberries, instead of plum. Really, any berry is lovely in this cake!

The Caker cake and cookie mixes are beautiful packages of pre-mixed ingredients to which you just need to add some milk, butter or oil and fruit / nuts in order to make a fail-proof and ridiculously delicious treat at home, Caker style. They are made with exactly the same ingredients that we use in the Caker Kitchen everyday. You'll find things you would not normally find in a baking mix like plenty of ground almonds, proper Belgian callebaut chocolate, premium pistachios and freeze-dried fruit pieces and powders. The cake mixes are also eggless and vegan - you can make them using regular butter and milk or vegan alternatives. The cookie mixes are eggless and use butter. All of the mixes are made with spelt flour, which can suit some people with gluten intolerance.
