PAPUA NEW GUINEA PLANTATION
These unique beans are sourced from a plantation found just outside Medang in the Morobe Province. The plantation sits in a deep alluvial valley enclosed by large mountain ranges on three sides. Much of the original cacao planted in PNG was derived from fine flavour varieties stemming from heritage Trinitario beans introduced by the colonial Germans from Samoa at the beginning of the 20th century. 
Bahen & Co. believe it’s the combination of these heirloom genetics, well drained volcanic soils, regular rainfall with periods of hot dry weather and high standards of farming practices that make this bean so complex and special. 

TASTE DESCRIPTION
The chocolate is bright and luscious with flavours of strawberry cream, red fruit, vanilla and sweet pipe tobacco.

Bahen & Co. makes stone ground chocolate from bean to bar.  A traditional approach to chocolate making that returns to a slower pace of a previous time. A former life as a winemaker has seeded in Josh Bahen an attention to detail and understanding that achieving simplicity in chocolate making is harder than complex. Taking a simplistic approach to respect flavour and connect back to the source. Restored from a vintage age and lead by a 1930’s Barth Sirocco Ball Roaster and circa 1910 Guitard Melangeur, the chocolate machines operate slow and cool with the wisdom needed to preserve the taste of distant places. The chocolate factory operates from the family farm in Margaret River - Western Australia.  A region with a raw natural beauty and strong community that supports the efforts of its small producers.
