BRAZIL PLANTATION
This plantation was once lost in the jungles of the Mata Altantica. Planted in the late 1950’s, it was sadly abandoned for a long period before thankfully falling into good hands in 2009. The new owners have re-created a village next to the plantation to house the 20 farmers they now employ. These farmers and their families call the village "paraiso". 
The farmers have worked hard to resurrect this plantation and are focused on preserving the original ‘parasinho’ ‘porto seguro’ and ‘almeida’ varietals.  These heirloom bloodlines contributed to the former glory of Bahia in the beginning of the 20th century as one of the world's great fine flavour cacao regions.

The chocolate broods of mulled wine, fruit cake and bold chocolate notes.

Bahen & Co. makes stone ground chocolate from bean to bar.  A traditional approach to chocolate making that returns to a slower pace of a previous time. A former life as a winemaker has seeded in Josh Bahen an attention to detail and understanding that achieving simplicity in chocolate making is harder than complex. Taking a simplistic approach to respect flavour and connect back to the source. Restored from a vintage age and lead by a 1930’s Barth Sirocco Ball Roaster and circa 1910 Guitard Melangeur, the chocolate machines operate slow and cool with the wisdom needed to preserve the taste of distant places. The chocolate factory operates from the family farm in Margaret River - Western Australia.  A region with a raw natural beauty and strong community that supports the efforts of its small producers.
