- 3 tbsp coconut oil
- 6 tbsp olive oil
- 3/4 cup coconut sugar
- 1 tsp vanilla bean extract
- 1 tbsp ground flaxseed meal
- 1 cup gluten-free plain flour
- 2 tbsp NOURISH Essential Daily Superpowder
- 1/2 tsp baking powder
- 2 tsp corn starch
- 1/4 tsp sea salt
- 2 handfuls vegan dark chocolate chunks
- Extra sea salt, for sprinkling
Pre-heat oven to 180°C / Line a large tray with baking paper / In a small bowl, combine ground flaxseed and 3 tbsp warm water, leave for a few minutes until thickened / In a medium bowl, whisk together oils, sugar, vanilla, and soaked flaxseed / In a seperate bowl, sift together flour, NOURISH, baking powder, corn starch, and salt / Add liquid ingredients and dark chocolate chunks, mixing for a few minutes until well combined / Scoop out 2 tbsp of mixture and roll into a smooth ball, flatten and place on baking tray / Repeat until you have 10 cookies / Cook for 8 minutes, or until golden / Remove from oven, sprinkle with sea salt and allow to cool slightly before serving.
